Boneless Ribeye

Our most popular cut of meat!! Ribeye is excellent as a roast or a steak and is sure to be a great meal. We usually cut these to order but on nice days we cut and trim our steaks to have them ready to go for you!

Beef Tenderloin or Filet Mignon

The filet is the most tender cut on the animal but is also not too big. We hand trim filets to ensure you get a great product to serve your family and friends. This cut can also be served as a roast or a steak!!

Sirloin Strip Steak

Flavorful steak that will grill up excellent!! This muscle does enough work to get flavor but not enough to make it tough, its an excellent balance.

Choice Packer Brisket

Full Packer Briskets are untrimmed and ready for you to bring home to prep for your smoker or oven

Top Sirloin Steak or Roast

Top Sirloin is an excellent steak that is just above the strip steak on the beef. Its got tons of flavor but not quite as tender as the strip. Just about 100% yield on this steak when cooked as well.

Plate Short Ribs

Plate Short Ribs or Three Bone Short Ribs are such a versitle cut that changes with the seasons.

In the warmer months we have them three rib sections for the smoker or cut for Korean Style Ribs,

during the colder months we cut them to braise.

Boneless Chuck Roast

During the colder months we carry Boneless Chuck Roasts, this is a tougher cut that needs to be cooked in the slow cooker, smoker or crock pot to create a tender and flavorful meal. We also make a Pot Roast in a Pouch thats a Chuck Roast w all the veggies and gravy ready to dump in a crock pot.

Steak Tips or Sirloin Flap Meat

We hand trim and cut these daily to make our marinated sirloin tips. These tips can be marinated or seasoned with your own special touch at home. Cut into strips to make fajitas or grill whole and cut up to make a steak tip sub

Sirloin Tip Roast

A very lean cut of meat that can make an excellent roast beef. This roast is best cooked no more than medium, sliced thin and served w an Au Jus or gravy
